I am just a beginner in soldering and it was easy.

I cut the wires just after the old thermistor and I have soldered the new.
I have put ptfe tub 0.3 mm ID 0.6 OD to insulate the thermistor...

The ptfe tub in the thermal tube is in silicone, which can be heated to 250° without melted.
Normally it is a slippery material, but I have forced to remove mine because there was an important jam....

For the thermal tube :

I don't explain the bed temp issue (perhaps the problem with your extruder thermistor and the strange temp it show don't allow you to change any temp)

With the relay system we could have 6 extruders max and 6 nozzles max but we loose a lot of printing surface.
It is for that it will be better and cheaper to have 3 nozzles instead of 6.
